Appa, Aang's Companion + Fire Lord Azula

Overview
When attackers are declared, both Appa's and Fire Lord Azula's attack-triggered abilities trigger. Appa's ability is a targeted triggered ability that can target another attacking creature that doesn’t have flying at the time the trigger is put on the stack (and must still be a legal target on resolution) and will give that creature flying until end of turn when it resolves. Azula’s “add {R}{R}” attack trigger and her copy-trigger both trigger at the same time; the controller orders those triggers on the stack. Azula’s mana trigger (it’s a normal triggered ability that produces mana) must resolve to add mana to your pool before you can use that mana to cast spells. If you cast spells while Azula is still attacking, Azula’s copy ability will trigger and copy those spells; if the copied spell is a permanent spell, the copy becomes a token when it resolves.
Step 1
Declare attackers. Appa and Fire Lord Azula are declared attacking (you must also announce which defending player/planeswalker each is attacking).
Step 2
At the moment they’re declared, their triggered abilities are put on the stack (508.2). Appa’s ability is a triggered ability that targets "another target attacking creature without flying"; you choose that target when Appa’s trigger is put on the stack.
Step 3
The controller of those triggered abilities chooses the order to put them on the stack (if multiple triggers from the same player were put on the stack at the same time, that player orders them).
Step 4
Resolve triggers in last-on-stack-first-to-resolve order. If Azula’s attack-trigger (add {R}{R}) resolves, add {R}{R} to your mana pool (that mana lasts until end of combat). That trigger is a normal triggered ability that produces mana and goes on the stack; it is not an instant mana ability that resolves immediately off the stack.
Step 5
After triggers that you want have resolved and you have priority (508.3), you may cast spells. If you cast a spell while Fire Lord Azula is attacking, Azula’s copy ability will trigger and be put on the stack.
Step 6
When Azula’s copy trigger resolves it copies the spell that was cast; you may choose new targets for the copy. If the copied spell is a permanent spell, the copy becomes a token when it resolves.
Step 7
If/when Appa’s trigger resolves, if its chosen target is still an attacking creature and does not have flying at that moment, that creature gains flying until end of turn. If the target is no longer attacking or now has flying, Appa’s trigger does nothing.
Resolution
At declare attackers, put both triggered abilities on the stack. When Appa’s triggered ability is put on the stack you must choose a target: another attacking creature that doesn’t have flying at that moment. The controller of the triggers chooses the order they are placed on the stack. If Azula’s attack-trigger (add {R}{R}) is resolved before you want to cast spells, you get {R}{R} in your mana pool (that mana lasts until end of combat) and can use it to cast spells while Azula is still attacking. Any spell you cast while Azula is attacking will cause Azula’s copy ability to trigger; its copy will be put on the stack and resolve according to normal copy rules (a copy of a permanent spell becomes a token). If Appa’s trigger resolves and its target is still a legal attacking creature without flying, that target gains flying until end of turn. If the target is no longer an attacking creature or now has flying when Appa’s ability resolves, the ability does nothing to that creature.
