Step 1
At the beginning of combat step on your turn, Helm of the Host’s ability creates a token that is a copy of the equipped creature (Aurelia) except the token isn’t legendary; that token also gains haste (Helm oracle text).
Step 2
The token enters the battlefield; any enter-the-battlefield triggered abilities the copy would have trigger now (see Ruling [2018-04-27]).
Step 3
When you get to Declare Attackers, you may declare attackers. The token can be declared as an attacker this turn because it has haste , and the original Aurelia can attack because it’s been under your control since the turn began. The declare attackers checks (including the untapped/haste requirement) are applied .
Step 4
When each Aurelia (original and token) is declared as an attacker, each creature’s own "Whenever Aurelia attacks for the first time each turn..." triggered ability triggers — one trigger tied to each creature. Those triggered abilities are put on the stack.

Untapping attacking creatures as part of those triggers does not remove them from combat . Because the Helm token is not legendary, the legend rule does not force you to sacrifice one of the Aurelias .
